4large bell peppers (any color), halved and seeds removed
1poundground beef

1cupcooked rice (white or brown)
1candiced tomatoes (14.5 oz) drained

Instructions
Preheat Oven: Preheat your oven to 375°F (190°C). Arrange the halved bell peppers in a baking dish, cut side up.
Cook Beef Mixture: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes. Add grass-fed ground beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks. Season with dried oregano, dried basil, salt, and pepper. Stir in cooked rice and diced tomatoes. Cook for another 2-3 minutes, until heated through.
Stuff Peppers: Spoon the beef mixture evenly into each halved bell pepper, filling them to the top. Press down gently to pack the filling.
Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
Add Cheese: Remove the foil from the baking dish and sprinkle shredded cheddar cheese over the top of each stuffed pepper. Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Serve: Remove the stuffed peppers from the oven and let them cool slightly. Garnish with chopped fresh parsley if desired. Serve hot and enjoy your delicious beef stuffed peppers!
