Chalupas

Ingredients
  

  • 1 pound ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning mix 1 oz
  • 1 can refried beans 15 oz
  • 8 chalupa shells or small flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • toppings: salsa, sour cream, sliced jalapeños optional

Instructions
 

  • Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes. Add grass-fed ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat if necessary. Stir in taco seasoning mix until well combined. Remove from heat.
  • Warm the Chalupa Shells: Preheat your oven according to the instructions on the chalupa shell package. Place the chalupa shells on a baking sheet and warm them in the oven according to the package instructions.
  • Prepare the Refried Beans: Heat the refried beans in a small saucepan over medium heat until heated through.
  • Assemble the Chalupas: Spread a layer of warm refried beans on each chalupa shell. Top with a portion of the cooked beef mixture. Then, layer shredded lettuce, diced tomatoes, diced avocado, shredded cheddar cheese, and chopped fresh cilantro on top of the beef.
  • Add Optional Toppings: If desired, add additional toppings such as salsa, sour cream, and sliced jalapeños on top of the chalupas.
  • Serve: Serve the grass-fed beef chalupas immediately while warm, and enjoy!
