Beef Totchos

Ingredients
  

  • 1 pound ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning mix
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 bag frozen tater tots (about 1 lb)
  • toppings (optional) sliced jalapeños, diced tomatoes, sliced black olives, chopped cilantro, sour cream, guacamole, salsa

Instructions
 

  • Preheat Oven: Preheat your oven according to the instructions on the tater tot package.
  • Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes. Add grass-fed ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat if necessary. Stir in taco seasoning mix until well combined. Remove from heat.
  • Prepare the Tater Tots: Arrange the frozen tater tots in a single layer on a baking sheet lined with parchment paper or aluminum foil. Bake according to the package instructions until they are crispy and golden brown.
  • Assemble the Totchos: Once the tater tots are cooked, transfer them to a large oven-safe dish or a baking sheet. Spoon the cooked beef mixture evenly over the tots. Scatter black beans and corn kernels over the beef.
  • Add Cheese: Sprinkle shredded cheddar cheese and shredded Monterey Jack cheese evenly over the beef, beans, and corn.
  • Broil: Place the dish under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.
  • Serve: Remove from the oven and let cool slightly. Garnish the totchos with your favorite toppings such as sliced jalapeños, diced tomatoes, sliced black olives, chopped cilantro, sour cream, guacamole, and salsa. Serve hot and enjoy your delicious grass-fed beef totchos!
