Ingredients
- 1 pound ground beef
- 1 tbsp olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 packet taco seasoning mix 1 oz
- 1 can refried beans 15 oz
- 8 chalupa shells or small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 avocado diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- toppings: salsa, sour cream, sliced jalapeños optional
Instructions
- Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes. Add grass-fed ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat if necessary. Stir in taco seasoning mix until well combined. Remove from heat.
- Warm the Chalupa Shells: Preheat your oven according to the instructions on the chalupa shell package. Place the chalupa shells on a baking sheet and warm them in the oven according to the package instructions.
- Prepare the Refried Beans: Heat the refried beans in a small saucepan over medium heat until heated through.
- Assemble the Chalupas: Spread a layer of warm refried beans on each chalupa shell. Top with a portion of the cooked beef mixture. Then, layer shredded lettuce, diced tomatoes, diced avocado, shredded cheddar cheese, and chopped fresh cilantro on top of the beef.
- Add Optional Toppings: If desired, add additional toppings such as salsa, sour cream, and sliced jalapeños on top of the chalupas.
- Serve: Serve the grass-fed beef chalupas immediately while warm, and enjoy!
