Ingredients
- 1 pound ground beef
- 1 tbsp olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 packet taco seasoning mix
- 1 can black beans drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 bag frozen tater tots (about 1 lb)

Instructions
- Preheat Oven: Preheat your oven according to the instructions on the tater tot package.
- Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes. Add grass-fed ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat if necessary. Stir in taco seasoning mix until well combined. Remove from heat.
- Prepare the Tater Tots: Arrange the frozen tater tots in a single layer on a baking sheet lined with parchment paper or aluminum foil. Bake according to the package instructions until they are crispy and golden brown.
