Equipment

  • 1 Baking dish
  • 1 Large Skillet
  • 1 Spatula or Wooden Spoon
  • 1 cutting board
  • 1 knife
  • 2-3 Measuring cups
  • 2-3 Measuring spoons
  • 1 Aluminum foil To cover the baking dish while baking the stuffed peppers in the oven.
  • 1 Oven Mitts
  • 1 Cheese Grater (optional) If you're shredding cheese for topping the stuffed peppers.

Ingredients

  • 4 large bell peppers (any color), halved and seeds removed
  • 1 pound ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup cooked rice (white or brown)
  • 1 can diced tomatoes (14.5 oz) drained
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt
  • pepper
  • Chopped fresh parsley optional

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Arrange the halved bell peppers in a baking dish, cut side up.
  • Cook Beef Mixture: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes. Add grass-fed ground beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks. Season with dried oregano, dried basil, salt, and pepper. Stir in cooked rice and diced tomatoes. Cook for another 2-3 minutes, until heated through.
  • Stuff Peppers: Spoon the beef mixture evenly into each halved bell pepper, filling them to the top. Press down gently to pack the filling.
  • Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  • Add Cheese: Remove the foil from the baking dish and sprinkle shredded cheddar cheese over the top of each stuffed pepper. Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Serve: Remove the stuffed peppers from the oven and let them cool slightly. Garnish with chopped fresh parsley if desired. Serve hot and enjoy your delicious beef stuffed peppers!
