- 1 Aluminum foil To cover the baking dish while baking the stuffed peppers in the oven.
- 1 Oven Mitts
- 1 Cheese Grater (optional) If you're shredding cheese for topping the stuffed peppers.
Ingredients
- 4 large bell peppers (any color), halved and seeds removed
- 1 pound ground beef
- 1 onion diced
- 2 cloves garlic minced
- 1 cup cooked rice (white or brown)
- 1 can diced tomatoes (14.5 oz) drained
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt
- pepper
- Chopped fresh parsley optional
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Arrange the halved bell peppers in a baking dish, cut side up.
- Cook Beef Mixture: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 3-4 minutes. Add grass-fed ground beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks. Season with dried oregano, dried basil, salt, and pepper. Stir in cooked rice and diced tomatoes. Cook for another 2-3 minutes, until heated through.
- Stuff Peppers: Spoon the beef mixture evenly into each halved bell pepper, filling them to the top. Press down gently to pack the filling.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Add Cheese: Remove the foil from the baking dish and sprinkle shredded cheddar cheese over the top of each stuffed pepper. Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
