Ingredients

  • 1 pound lb beef sirloin or tenderloin thinly sliced into strips
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp Salt
  • 1/4 tsp pepper
  • Chopped fresh parsley for garnish optional
  • Cooked egg noodles or rice, for serving

Instructions

  • Prepare Beef: Season the beef strips with salt and pepper. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Add the beef strips in batches and cook until browned on all sides. Remove the beef from the skillet and set aside.
  • Cook Onion, Garlic, and Mushrooms: In the same skillet, add the remaining tablespoon of butter and olive oil. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes. Add the sliced mushrooms and cook until they release their moisture and become tender, about 5-6 minutes.
  • Make Sauce: Sprinkle the flour over the mushrooms and onion mixture. Stir well to combine and cook for 1-2 minutes to cook off the raw flour taste. Gradually pour in the beef broth while stirring continuously to avoid lumps. Bring the mixture to a simmer and cook until slightly thickened.
  • Add Sour Cream and Seasonings: Reduce the heat to low and stir in the sour cream, Dijon mustard, and Worcestershire sauce. Return the cooked beef strips to the skillet and stir to coat them in the sauce. Simmer gently for a few minutes until the beef is heated through and the sauce is smooth and creamy. Taste and adjust seasoning with salt and pepper as needed.
